
Enjoy this super rich sweet potato brownie recipe, high in resistant starch and O’ so yummy!
Ingredients
- 2 cups of raw finely grated sweet potato (white flesh, purple skin)
- 2 large free range eggs
- 1/2 cup raw cacao powder
- ¾ cup coconut sugar
- 1/4 cup Jimalie virgin coconut oil
- 2 tbsp green banana flour or buckwheat flour
- 2 tsp pure vanilla extract
- 1 tsp bicarb soda
- 1/2 tsp baking powder
Procedure
1. Place all ingredients into a bowl
2. Mix until combined
3. Place in a brownie pan lined with baking paper (approx 27x18cm)
4. Bake in oven for 30 minutes at 180 degrees
5. Allow to cool before slicing
Makes 12 slices
