Filipino Style Grilled Prawns

 

Heres an authentic and easy dinner idea or a brilliant starter for a Filipino inspired feast.

 

Ingredients
  • 10 whole Australian prawns, uncooked
  • 2 tbsp canola oil

 

Coconut Sauce

  • 1 can Jimalie organic coconut milk
  • 1 lemongrass stalk, inner white part only, pounded in mortar and pestle
  • 2 garlic cloves, pounded in mortar and pestle
  • ½ thumb sized piece of ginger, pounded in mortar and pestle
  • Fish sauce to taste
  • Jimalie coconut sugarto taste
  • Pinch of turmeric to taste
  • Chilli powder to taste
  • 2 tbsp canola oil

 

Coconut Topping

  • 4 tbsp toasted organic coconut chips
  • 4 kaffir lime leaves, finely sliced
  • 1 lemongrass stalk, inner white part only, finely sliced
  • 4 small green chillies, finely sliced
